Notarized macOS builds now default to arm64-only. The `include-x86-architecture` argument controls the x86_64 slice for both local and GitHub Actions builds; it defaults to `false`.

If an Intel-compatible Review build is required, enable `include-x86-architecture` when starting the notarized build. UI Tests explicitly use `false` and run against arm64-only builds.

Local `archive.sh` script is unaffected.
